Four ingredients, endless arguments: egg, guanciale, pecorino, black pepper, and absolutely no cream. I draw each one by hand and write the quantities around the rim, so the plate reads like the recipe itself. It’s the dish Romans argue about, on a plate your guests will ask you about.
